O Come All Ye Eggnog

‘Tis the season for holiday overload. Before writing this post, I asked the Somnia staff some of their favorite late night snacks. And voila! Here we are talking about eggnog.

You might not think of eggnog as something that can go many different ways- maybe it bores the bejesus out of you. But! What if I told you there are countless different takes on the classic eggnog? From turning it into various breakfast items, to sweet cakes, cookies and bars, the options with eggnog are limitless.

Like how about these eggnog cupcakes with spiced rum buttercream from Bakers Royale?! Not only does this recipe look as pleasing to the eyes as it does to the stomach, but it also is filled with ingredients you probably already have on hand. Besides fun sprinkles, eggnog and perhaps some rum, the rest of the ingredients are true pantry staples. Butter + flour + vanilla + milk + rum? Yum!!

Or maybe you’re more into cookies than cupcakes, and if that’s the case you should try these eggnog cookies topped with an eggnog glaze from The Recipe Critic. They look like a gooier version of a sugar cookie, topped with icing. Can it get much better than that? You could always make this dough in advanced, cut/form them into balls and freeze ’em until you’re ready for baking. This is great tip for most cookies during the holiday season, because the last thing you want to do when rushing to get everything ready for Christmas is have to worry about cookies.

And now for the really ambitious baker, eggnog macarons from The Gunny Sack. Macarons aren’t knowing for being the easiest cookie make, but practice makes perfect! And these would be so so rewarding when done. Macarons are one of my all time favorite desserts, and as an added bonus they’re naturally gluten-free!

I hope these ideas inspire you to stray away from the traditional eggnog and try something new!

Happy eggnogging to all, and to all a good night. :)
